How To Make Oven Baked 4-Ingredients Irish Nachos:

Step 1: The High-Heat Roast: Preheat your oven to 425°F. Line a large rimmed baking sheet with foil. Scrub your potatoes and slice them into 1/8 to 1/4-inch rounds.

 

Tip: Use a mandoline slicer if you have one! Keeping the slices perfectly uniform is the secret to making sure every “chip” finishes cooking at the exact same time.

Step 2: The First Bake: Spread the potatoes in a single, slightly overlapping layer. Bake for 20–25 minutes, flipping halfway through. You want the edges to be noticeably golden and the centers tender.

Step 3: The “Nudge” & Layer: Once the potatoes are browned, take them out and nudge them closer together to close any gaps. This creates a solid “floor” so the cheese doesn’t just melt onto the foil. Sprinkle the shredded cheddar and crumbled bacon evenly over the top.

Step 4: The Meltdown: Return the pan to the oven for 5–8 minutes. You’re looking for the cheese to be bubbling and the bacon to be sizzling.

Step 5: The Fresh Finish: Remove from the oven and immediately scatter the sliced green onions over the top. The residual heat will slightly soften the onions without losing their bright, fresh crunch.
