Step 1: Prepare the Foil
Tear off 4 large sheets of aluminum foil, each big enough to fully wrap one chicken breast. Lightly fold up the edges to prevent the sauce from spilling out.
Step 2: Prep the Chicken
Place one chicken breast in the center of each foil sheet. If needed, pound or slice thicker pieces to ensure even cooking.
Step 3: Add the Flavor
Drizzle each chicken breast with olive oil, then spoon pesto generously over the top, spreading it evenly.
Step 4: Seal the Packets
Fold the foil over the chicken and seal tightly to create secure packets.
Step 5: Cook
You can cook these packets in two ways:
Oven: Bake at 200°C (400°F) for 25–30 minutes
Grill: Cook over medium heat for 20–25 minutes
The chicken should be fully cooked and tender.
